Summer salad with fresh fruit
In the summer one of the things that I enjoy for lunch is a nice salad. I like to combine vegetables and fruit in season. In this season the nature gives us the wonderful fruit, strawberries, peaches, apricots.
If you add a few flakes of fresh cheese, such as robiola, primo sale, ricotta or goat cheese and a little dried fruit as hazelnuts, walnuts or almonds have a delicious and unique dish rich in vitamins and minerals. With a little imagination you bring to the table a dish of fresh, light but also tasty and complete. And not to be overlooked is the fact that it is easy to prepare.

Ingredients 200 g mixed salad 100 g of fresh cheese (goat cheese, salt, feta cheese, robiola, ricotta) 2 peaches 3 apricots 8 strawberries 8 cherry tomatoes 1 green apple 1 handful of hazelnuts a pinch of salt and oil.v.or. balsamic vinegar
Instructions Wash all fruit, salad and cherry tomatoes, and pat dry with a paper towel. Slice the apple and the strawberries. Cut four of the tomatoes. Finally, cut into small cubes, apricots and peaches. Prepare the vinaigrette by emulsifying in a small bowl the olive oil, a pinch of salt and the balsamic vinegar. In a bowl, add the salad, the fruit, and the tomatoes and season the salad with the vinaigrette. Arrange on the plates, adding pieces of soft cheese, and some hazelnut.

It is a fresh dish, perfect for the spring days and the first warm summer. Could take you on a picnic in the open air or maybe get your lunch in the office. Served in small bowls or maybe a jar becomes a cute idea even for a light buffet and it's delicious.
