Salad with raspberries, avocado and pine nuts
The salad with raspberries, avocado and pine nuts is a side dish a little different from the usual salads of all days. Cheerful, colorful and tasty, this salad has me leaving the summer! It is a mix, maybe not for everyone, but for me winning precisely because of its contrasts: from the buttery avocado to the sour fruitiness of raspberries, the creamy cheese, crunchy pine nuts, toasted, each ingredient has its own function for our taste buds!
If you want you can change the proportions of the ingredients or change someone, for example, opting for the soft cheese in place of cottage cheese or iceberg lettuce instead of the lettuce, to say, but to me it was perfect just so 🙂
First of all, clean the avocado and cut it into thin slices.
wash the cherry tomatoes and cut them in half, prepare the dressing by combining flax seeds, olive oil and a pinch of salt and pepper, slightly roasted pine nuts in a non-stick frying pan.
So let's start to assemble your salad: put the lettuce in a serving dish, distribuiteci above the tomatoes, then the avocado, then the raspberries and the cheese, and finally the pine nuts and the dressing.
