The pokè bowl is a dish originating from the hawaiian of raw fish, usually tuna or salmon, accompanied by rice, fruit and various sauces. It is, therefore, a mega salad very healthy and rich, very good and also full of superfoods for a boost of vitamins, minerals, antioxidants and good fats. Prepare a pokè bowl in the house is very simple, the ingredients can vary, but usually there are always basic elements: a source of carbohydrate, a food protein, the sauce and the topping, which is both decorative, but also add other elements that will complement the dish, from the point of view, then, not only aesthetic, but also the nutritional and consistency.
I and the girls in the office are food addict, and occasionally at lunch we order this dish for take away, but this time, we decided to prepararcelo home made and this is the result. For our pokè bowl I used rice, salmon, avocado, mango, seaweed wakame, sesame seeds, and raspberries. The result is spectacular, both the eye and the palate, try it and you will not regret it!
Put the rice in a bowl, cover completely with water, grainy rice and drain it.
Repeat the operation until the water will not come out clean and clear, and then drain for the last time and let it rest for 30 minutes.
Transfer the rice in a thick-bottomed pan and add approximately 300-350 ml water (more or less one and a half times the weight of the rice).
Let stand for 10 minutes, then begin to cook over medium heat: once it reaches a boil, close the lid, lower the flame and cook again for 12 minutes without opening the lid.
In the meantime, prepare the vinaigrette: put all ingredients in a small saucepan, then heat over a low flame, to dissolve sugar and salt, without, however, bring to the boiling point.
Once ready the rice, put the salmon in a bowl, add the vinaigrette and stir, then cover with a clean dishtowel and let cool to room temperature.
Prepare the other ingredients and clean the avocado and mango and slice them.
So let's start to assemble your bowl, by putting all the ingredients separately, “wedges”, in a bowl.
Season the pokè bowl with a little sauce, teriaky, decorated with sesame seeds and raspberries and serve.
