Pizza with cornice padded

The pizza with cornice padded is a delicacy remarkable, and it's spreading a bit’ of years in some pizzerias. It is a normal pizza, made with dough and stuffed as you like, just like any pizza worthy of the name. The peculiarity lies precisely in its cornice, which is stuffed, usually with cheese and little else, but even here you can indulge if you want (that is to say, there are people who put also sausage and cheese, you do!) 😉 The ideal, as all the pizzas, would be to use a dough with a long rising, but if you're too curious to try the pizza with the crust stuffed, you can do like me and use a recipe a little faster.
In this case, I opted for a filling with a base of tomatoes, yellow and buffalo mozzarella, a real treat, and a cornice padded simply with ricotta and pecorino cheese, a combo spectacular and really enhances the best of the dish: try it and then you tell me 😉

 

First, prepare the pizza dough: put the flour in a bowl, add the yeast and start to dissolve it, adding water a little tepid.
Begin to incorporate the flour, then add salt and oil.

Continue to work for at least 15 minutes, until you get a dough elastic, smooth and homogeneous.

Divide the dough into 4 equal parts, place them on a lightly floured surface and let rise for at least 2 hours in a closed place, sheltered from the currents.

Prepare the filling for the crust, working the ricotta with pepper and pecorino cheese.

Once leavened the dough, take the dough balls, sgonfiateli with the never dust with flour and then roll out to form a base for pizza, a little larger than normal.

Arrange the filling along the edges of the circle of pizza dough (if there is more comfortable, you can use a pastry bag), then fold the dough over the filling to create the cornice padded. Sealed well.
Then proceed with the normal filling of the pizza, in this case, I put the tomatoes and I seasoned with a little salt and oil.

Bake in ventilated oven, preheated to 250°C for about 15 minutes, then take the pizza, add the mozzarella and cook for another 5 minutes.

Your pizza with cornice padded is ready, decorate with basil parma ham and serve immediately.
