Pasta with bacon, potatoes and arugula

Pasta with bacon, potatoes and arugula salad was the hit of the group on Facebook for a bit before I convincessi to try it too. Maybe not the most summery of dishes, but I assure you that its because, especially now that the temperatures have slightly dropped, so, here I am, a card also on my blog. The peculiarity of this recipe is cream of potato that acts as a link, enhanced by the saltiness of the bacon and lightened and made more fresh by the rocket. First of all cook the potatoes: place them in a pot, cover completely with cold water, turn on the heat and cook for 30-40 minutes (check the cooking with a fork before drain).
When they are well cooked (the potato must scivolar away easily from the fork), drain, spellatele and mash with a potato masher.

Add the cream, salt and pepper, and stir.

Put to cook the pasta.
Toast the bacon in a non-stick frying pan with a little olive oil until browned, then add the arugula, washed and mix quickly.

Drain the pasta al dente, leaving aside a little of the cooking water.
Add the cream of potato with bacon, add the pasta and the parmesan cheese and stir, adding a little of the water set aside if necessary to make the dish more fluid and creamy.

Pasta with bacon, potatoes and salad is ready, serve it immediately!
