Raspberry Coulis: 250 g raspberries, 2 tablespoons sugar, juice of half a lemon

Breading: 100 g breadcrumbs, 1 egg, 1 egg yolk, rice flour, oil for frying

So let's begin with the sweet dumplings. First grind coarsely the apples. We combine together the apples, ricotta, sugar, mascarpone cheese, the potatoes, the egg. Join the rice flour and mix well. Take the vanilla seeds from the berry. Cut the sheets of parchment paper that we lower on a transparent film. Above say 30 grams of rice, crushing it for good. Suppose we were to make a sort of sushi.

Pass the meatballs in the rice flour, then in beaten eggs and finally in bread crumbs. Fry in the hot oil and deep until golden brown. Down on absorbent paper.

We pass therefore to the preparation of the raspberry coulis for the sweet dumplings. In a blender, blend together the raspberries with the sugar and the lemon juice, then filter the mixture through a strainer. We leave then to cool. Then serve the meatballs with the coulis.
