Opening Preview on macOS Catalina, simply go to Tools – Annotate – Signature – Manage, Signature – Create signature and select iPhone or iPad, or directly from the icon names in the menu bar

Selected the device, the iPhone or the iPad will show a white screen where you will find a line where to append our signature to be imported directly in the Preview.
