The eggplant and feta are a second dish very tasty, you can also use as a side dish, and that brings to mind evenings in the summer along the beaches of the fantastic Greece. The recipe is very simple and above all super tasty, if you love the eggplant and the feta like me you have to absolutely try it!
I used a mix of fresh herbs: basil, thyme, rosemary, marjoram and oregano, but you can use the herbs you prefer, or simply you have available, possibly fresh, because the recipe gives its best, but otherwise, dried will be fine 😉
Drain the feta and cut into cubes.
Prepare the marinade by combining the chopped herbs, salt, oil and 3/4 of the feta cheese.
Stir and let simmer.
In the meantime, peel the eggplant and cut into slices the thickness of half a centimeter or so, then grill on a grill very hot.
As they are ready, arrange the eggplant on a serving dish.
Cover with the marinated feta, then add the rest, breaking it down gently.
Serve immediately your eggplant feta.
