Croquettes of rice salad
Croquettes of rice salad are first and foremost delicious. But they are also a way of recycling for when, as often happens, we find ourselves with left over rice salad to consume. If your recipe does inspire you and you want to prepare it from scratch, no problem: cook simply, 100 g of rice, drain, let cool and season to taste with corn, tomato, tuna, cheese, basil, olives... of course you can vary the salad dressing as you prefer, eh! Then proceed as in the recipe 😉
Add the egg, the basil and the olives to the rice salad and mix.
With wet hands, form the meatballs and roll them in the breadcrumbs.
Heat the oil (you can use whatever seed or olive oil, whichever you prefer) in a frying pan and fry the croquettes, done to make them brown evenly.
Once golden brown, drain on kitchen paper.
Croquettes of rice salad are ready, serve them immediately!
