Cream of cucumbers and yogurt

The cream of cucumbers and yogurt is a very special recipe. In reality this is a smooth, obviously is the summer version! If you want you can also serve it hot, but I think that gives her up from the cold: so you can prepare it in advance, let it cool, store it in the fridge... and coming back from the sea you will know you already have the lunch ready, light, tasty and refreshing, definitely perfect for summer! You can serve it with some toasted bread or eat it is also so simple, cremosissima and delicious!
Girls don't know about you, but in this period I would eat only cold food, especially at lunch time when outside there is a nice heat.

Peel the cucumbers (remember to keep aside a few slices for decoration) and the potatoes, then cut everything in cubes.

Thinly slice the onion and brown it with a little oil in a saucepan.
Add the vegetables, cover with the broth and simmer for 20-30 minutes (check the cooking of the potatoes with the tines of a fork).

Blend with the blender, then add the Greek yogurt and season with salt.
If you prefer a consistency more thick, put on low heat and let thicken.

The cream of cucumber and yogurt is ready, you can serve it hot, warm or cold, depending on your tastes.
