Cous cous salad cherries and feta

The salad of couscous with cherries and feta is a recipe a bit special, but definitely very good. As you may recall from past years, when it comes to summer I like to prepare salads and delicious over the last few years, more and more often I started to match up to the normal vegetables from the salad also various types of fruit. I find that it is a great way to process of light meals, tasty, delicious and original. I realized, however, that he never prepared pasta salads (or similar) with fruit.
So this is my first experiment: a salad of couscous with cherries and feta, the combination is really special for a first course delicious and fast that I will repeat as soon as 😉

First, prepare the couscous: put it in a pot, add twice the weight in warm water, add the salt, stir, cover with another upside-down plate and let the water be absorbed (it will take 5-10 minutes).

In the meantime, slightly roasted hazelnuts in a non-stick frying pan and chop coarsely.
Peel and grate the ginger and at the rind of a lemon, and then washed and pitted the cherries.

In a bowl, put the arugula, washed with hazelnuts and cherries.
Grainy couscous with a fork and add to the rest, finally add ginger and lemon and feta chopped.
Seasoned with olive oil and season with salt and pepper.

The cous cous salad cherries and feta cheese is ready, stir gently and serve.
